Buy the spiral bound and use it as an instruction manual for cooking. I love America’s Test Kitchen and this book lives up to their standards. There is a great introduction which outlines how to change to a Mediterranean diet. There are a lot of vegetable recipes but that is what the Mediterranean diet is all about. You may think that the salad chapter is just a bunch of ways to throw lettuce together but it is more.
